Forte Agent (to come back to this example) e.g. marks text
in a different color when the line is introduced by
">" or "|". So PMMail could do. Another idea might be to
mark all lines in a different color that begin with
some chars and then ">" or "|" without any spaces between them.

So you could additionaly mark sth. like this as quoting:

=>
***>
