In addition to Luko's response for reading headers, ...

You can also tell by telnetting into the server and reading their
banner:

telnet -p 25 mail01.ims-firmen.de
220 mail01.ims-firmen.de ESMTP Exim 4.12 Sun, 26 Jan 2003 01:49:44
+0100

You should telnet into YOUR outbound mail server however, not Luko's
